1. Baked Chicken Dinner for the First Night
Warm up the Rotisserie Chicken you brought home in the microwave. Directions for this are usually on the package. Next, make a side dish such as your favorite rice or baked potatoes. The potatoes can be cooked in the microwave to save time just don’t forget to prick them with a fork.
Lastly heat up a vegetable such as green beans, corn, peas, or whichever your kids will eat. The longest this meal takes is cooking of the rice or potatoes. Enjoy
Leftover Rotisserie Chicken
Okay so now you made your main meal out of the rotisserie chicken but what do you do with all the leftovers? These last 9 ideas are great ways to use up all that shredded chicken.
2. Quesadilla Night
I always have flour tortillas and shredded cheese in my fridge so this is an easy meal to throw together for dinner or lunch. To cook several at a time for your family, bake them in your oven on a sheet pan.
Preheat your oven to 375 degrees. Next shred up the chicken into a bowl. The other ingredients to your quesadilla can be adjusted to each family member’s taste. Some ideas for additional ingredients are bell peppers, black beans, onions, or corn.
Spray your baking sheet or use foil and lay out the bottom layer of tortillas. Add on top of the tortilla your toppings and cover with the second tortilla. Bake these at 375 degrees for 8 minutes or cook them in a frying pan. Serve them with sour cream or guacamole.
3. Tortilla Pizzas
Chicken Pizza
Use leftover chicken the next day to add to a pizza. Bake a tortilla in the oven with pizza sauce, shredded chicken, and cheese. If your kids will eat it, add a couple of diced veggies. Bake at 425 degrees for 8 minutes or until the cheese is bubbly and ready.
BBQ Chicken Pizza
Add some more flavor by mixing the leftover chicken with BBQ sauce. Spread pizza sauce on the tortilla and top it with BBQ chicken and mozzarella cheese. Bake at 425 degrees for 8 minutes or until the cheese is bubbly and ready.
Buffalo Chicken Pizza
Spice it up by mixing the chicken with hot sauce or buffalo wing sauce. Use blue cheese dressing as your sauce and top with mozzarella cheese. Once again bake at 425 degrees for about 8 minutes.
You can cook several tortillas together by placing them on a cookie sheet and baking them together.
4. Homemade Pizza
If you prefer to make a whole pizza instead of individual Tortilla pizzas, buy premade pizza dough at the grocery store or Trader Joe’s. My personal favorite is the premade garlic pizza dough at Trader Joes’s. It really adds great flavor to your pizza.
Start by rolling out the dough and top it the same way you would top the tortilla pizza above. Then bake it according to the directions on your dough package.
5. Pesto Pasta
I love to throw the already shredded leftover rotisserie chicken into my pasta dishes. One of my family’s favorites is Pesto pasta. You can make your own Pesto at home or buy it premade at the store. We like the Costco Kirkland Signature brand pesto the best.
First, boil your favorite pasta according to the package directions. While that is cooking, dice up some vegetables and sauté them in a pan. Some diced vegetable suggestions are zucchini, bell peppers, asparagus, or mushrooms. When veggies are done, thrown in the chicken just to warm it up and some salt and pepper.
Finally, add the veggies and chicken to the drained pasta and mix in the pesto. This meal should be done in 20 minutes.

Rotisserie Chicken Nachos
How fun would this be for dinner or lunch! Cover a sheet pan with foil and spray it with cooking spray. Preheat your oven to 425 degrees. Start by covering the bottom of your pan with your favorite tortilla chips.
Next, sprinkle on top of the chips leftover shredded rotisserie chicken, black beans, and cheese. Then repeat with a second layer.
Bake for 10 –12 minutes or until cheese is melted. Remove from oven and top with sour cream and guacamole.
7. Rice Bowl
This is a great way to use leftover chicken. Cook some brown or white rice and sauté some veggies (bell pepper, mushrooms, zucchini, broccoli). When veggies are about done cooking, throw in the meat to warm up and add taco seasoning or teriyaki sauce depending on the flavor you want.
Add the veggies and meat on top of the rice and you’re done. If you used a taco seasoning, you could add some cheese or sour cream on top also.
8. Taco Night
My kid’s favorite night of the week! To make this more fun, make it a taco bar. Put out bowls with all your toppings such as cheese, salsa, guacamole, sour cream, onions, lettuce, or tomatoes.
Warm-up your shredded chicken in a pan then add a little water and taco seasoning. This will give the chicken some extra flavor. Lastly, put it all out on the counter for the kids to put their own dinner together.
9. Mexican Rice Bowls
I use the leftover rotisserie chicken to make quick Mexican rice bowls. Start by sautéing some bell peppers, onions, and zucchini in a large skillet. When they are done transfer to a plate. In the same large skillet start cooking your Mexican rice according to the box directions.
While the rice is cooking make some frozen corn then rinse and drain a can of black beans. When there are five minutes left of the rice cooking add in the veggies, chicken, corn, and black beans.
Last, top with cheese and let it melt in the pan. Serve it up with some sour cream or guacamole on top.
10. Grilled Cheese
Want to pump up the flavor of your grilled cheese sandwich? Forget the boring version with just cheese and bread of your childhood. Let’s make this a meal you would enjoy. Here are two great options to add some fun to your quick meal
Buffalo Chicken Grilled Cheese
Start by turning your shredded chicken into buffalo chicken by mixing it in a bowl with creamy buffalo sauce. Next, start your grilled cheese by buttering your bread on one side and slicing up your favorite cheese, like cheddar or Colby Jack.
I warm up the chicken in the microwave for 20-30 seconds so that the meat is not cold. Now it’s time to fill your sandwich. Add your first piece of bread to the frying pan and top with a slice of cheese, the buffalo chicken, one more slice of cheese, and the second piece of bread.
Cook until both sides of the outside bread are golden brown and the cheese is melted. Now you’re ready to eat.
Pesto Chicken Grilled Cheese
This time toss your shredded chicken in a bowl with pesto. For this grilled cheese, I like to use mozzarella cheese and add a tomato. Make the sandwich like you would a grilled cheese sandwich by adding it to the bread in the following order – mozzarella cheese, pesto chicken, tomato, second slice of mozzarella cheese.
This sandwich will come out gooey and delicious. Add a bowl of soup and you have a complete meal.
